Executive chef at the Olde Towne Tavern and Grille since 2008, chef Justen Ashcraft believes that continuing education and keeping food fun and up to date is essential for any restaurant.
Chef Justen has traveled around the United States practicing and honing his craft. Starting in Michigan and moving on to New York, then South Carolina, and then finally find himself in Braselton Georgia.
Starting at the prestigious “Tribute” restaurant in Farmington Hills Michigan chef Justen began his love for all types of cuisines. After graduating from the Culinary institute of America Justen came back to his home town and opened the Big Bear Lodge as their chef de cuisine.
Moving from there to open a small restaurant called The Embers Grille for a short stay until he finished his time in Michigan at the Big Rock Chop house in Birmingham, Michigan as the executive sous chef.
His time in Georgia has taught him a lot about regional cuisines and he likes to infuse that with his knowledge of Asian foods and techniques. Finding himself at the Olde Towne Justen likes to find things to entice his guests and try to keep them coming back weekly for different preparations and styles.
